Ingredients:

3 tbsp cacao nibs or cocoa powder

1 1/3 cups dates pitted and chopped

1/2 cup cashews

1/2 cup almonds

1/3 cup goji berries

1 tbsp spirulina powder

2 tbsp chia seeds

1 tbsp maca powder

2 tbsp shredded coconut plus additional if needed

A pinch of salt

Instructions:

1) Add cacao nibs to food processor and process until coarse powder is formed.

2) Spoon out 1 tbsp to roll balls in if desired and set aside.

3) Add remaining ingredients to food processor & blend together.

The result should stick together when pressed between fingers.

If mixture crumbles, add a couple more dates and mix once again!

4) Divide 2 tbsp of the mixture & press and roll into a ball with hands.

5) Repeat until mixture is completely used.

6) Roll some of the balls in extra cacao and coconut.

7) Refrigerate for 30 to 35 minutes before enjoying.

Chia seeds! These adorable, small, multi-faceted, gray seeds are, you guessed it, a Superfood!
